私は家の近くに24時間営業のスーパーマーケットとコンビニがあるため、冷蔵庫を使っていません。

 

過去のPDCA日記でも紹介しましたが、3分の1の食料は捨てられています。

 

私は必要なものを必要なだけ調達する「食料カンバン方式」を採用しており、自宅で食料を捨てるということがありません。

本日紹介する資料「セブン-イレブンは日本をどう変えたのか」は、「その日本人の生活スタイルは、すべてセブンイレブンが作り上げたものだ」をキャッチフレーズにしており、「サンドイッチのレタスがシャキシャキなわけ」部分の以下のフレーズが印象的でした。

 

「食の安全性、品位アップという観点で記録しておきたいのは、セブンイレブンが2005年に構築した全国規模の『コールドチェーン』(低温物流網)です。

 

一般的に野菜や果物は、収穫後、卸を通して店へ並びます。

 

卸市場は屋根のない開放的な空間が多く、常温保存、そうした温度変化にさらされて野菜は水分が蒸発したり、栄養が減少したりします。

 

つまり、おいしくなくなってしまうわけです。

 

これを防ぐために、コールドチェーンを導入。

 

収穫後すぐに5℃くらいまで冷やし(予冷)、生産地から、製造工場、店までの流通過程をすべて低温下で輸送するシステムです。

P.S. 考えてみると、人間はいつの間にか1日3食になりましたが、動物は空腹になったら狩りに出る仕組みになっています。

 

私が採用している「食料カンバン方式」も空腹になったら買いに行くというプロセスであり、野生の動物の行動に近いのかもしれませんね :-)。

今回出てきた「シャキシャキな」を英語にすると、「crispy」になります。

 

「サンドイッチのレタスがシャキシャキなわけ」を英語にする場合、「Why sandwich lettuce is crispy」とすればよいですね :-)。

The material introduced today "How Seven-Eleven changed Japan (Japanese only)" has a catchphrase "The Japanese lifestyle is all created by Seven-Eleven", and the following phrases were impressive in the part "Why sandwich lettuce is crispy".

 

"From the perspective of food safety and quality improvement, Seven-Eleven built the nationwide 'cold chain' (low temperature distribution network) in 2005.

 

Generally, vegetables and fruits are lined up in stores through wholesale after harvesting.

 

Many of the wholesale markets are open spaces without roofs, and when stored at room temperature, vegetables are exposed to such temperature changes, and their water content evaporates and their nutrition decreases.

 

In other words, it doesn't taste good.

 

Therefore, Seven-Eleven implemented a cold chain to prevent rot.

 

It is a system that cools to about 5 °C immediately after harvesting (pre-cooling) and transports the entire distribution process from the production area to the manufacturing plant and store at low temperature.
